Avocado Toast

Ingredients

  • 2 slices of whole grain bread

  • ½ a ripe avocado

  • 2 eggs

  • Salt and pepper to taste

Instructions

First, put an oil of your choice on a hot pan. Next, crack open two eggs on the pan and let that cook on medium. While the eggs are hardening, cut an avocado in half. Keep the pit in the half you’re not using, store it in an airtight seal. Mash the avocado until it’s the consistency you want. Lastly, toast your favorite whole grain bread. Now that all the cooking is done, it is time to assemble. Top your toast with the mashed avocado and 1 egg on each. For taste, sprinkle a dash of salt and pepper. (This dish can easily be made vegan friendly by using tomato slices instead of eggs).
