Your Plant-Based Options for the Holidays

Happy Holidays, Ospreys!

Midterms have passed, it’s finally starting to cool down, and Thanksgiving festivities are right around the corner! This year, we’re celebrating World Vegan Month and bringing you some excellent ways to get in some fruits and veggies during the holiday season, both on and off campus. Whether you’re going home for the holidays or staying close to campus, there are plenty of plant-based holiday foods beyond Tofurkey!

First off, have you heard about the brand new plant-based brochure? It’s a way for all students, not just our vegetarian and vegan friends, to find healthy, fruit and veggie-packed options at UNF. It breaks down all of the plant-derived foods available on campus by dining location (yes, even at Pita Pit for you Cove and Crossings dwellers), and even provides quick tips on how to “veggie-fy” your favorite menu items. We highly recommend that you check it out, even if you’re not exactly team salad. You may find something new!

Some of the scrumptious vegan-friendly options at UNF include:

  • Vegetable sushi rolls at Chop’d & Wrap’d

  • Plenty of bagel flavors at Einstein’s, topped with avocado or peanut butter spread

  • Vegetable lo mein and Jackfruit pulled pork sandwiches at the Osprey Cafe

  • And so much more!

With all of that in mind...

You are cordially invited to the Osprey Cafe's Friendsgiving celebration!!!

UNF Dining Services is having their annual “Friendsgiving” Celebration on November 19th in the Osprey Cafe from 11 am to 2 pm. We know that traditionally on Thanksgiving we gather with close friends and family, but what about making new friends on Thanksgiving? That is just what Dining Services is trying to do with “Friendsgiving,” where a community table is set up to encourage students and faculty to join together and make new friends with each other. Friendsgiving is an event that helps to promote building a sense of community here at UNF and emphasizes meeting new people!

The Osprey Cafe’s Executive Chef, Joel Gossett has quite the spread planned for this table-side event.

The menu consists of:

Thyme-Roasted Turkey with Gravy

Pineapple Glazed Ham

Cranberry Relish

Green Beans

Cranberry-Sausage Stuffing

Sour Cream and Chive Mashed Potatoes

Sweet Potato Casserole

Broccoli & Cauliflower

Butternut Squash Plant Based Option: BBQ Tempeh!

Last year’s Friendsgiving at the Cafe was a big hit, and we sincerely hope that you can visit this year and spend some time eating great food and getting to know your fellow Ospreys-- no RSVP required!

Heading home for the holidays instead? Not a problem; we’ve put together a plant-based menu with appetizers, entrees, and a yummy dessert to bring some smiles to the table and win over the meat lovers.


This plant-based butternut squash soup is sure to warm your soul and keep you feeling festive this holiday season!

Side Dish

This green bean casserole is a definite crowd pleaser and comfort food, even for the dairy lovers!


Impress your guests (or yourself!) with this Lentil and Eggplant Lasagna. Lentils are packed with protein and fiber and are naturally low in fat. You surely won’t miss the meat with this one!


Last, but certainly not least, try this Vegan Whole Wheat Apple Pie with coconut whipped cream for some sweet fall flair.

To wrap things up, we’d like to remind everyone that the holidays are a time for friends, family, fun, and food. Along with sharing great memories, you are going to be sharing awesome family recipes and likely taking a couple extra servings of your favorite dishes. When you indulge on Thanksgiving day, make sure you do so mindfully: take the time to really enjoy the flavors of your food and check in with yourself frequently and stop when you are feeling full (not stuffed!). This way you can sit down, slow down, and really savor delicious food and quality time with your loved ones.
