A Healthy Thanksgiving


On Tuesday, November 14th the UNF Dining services held a thanksgiving feast which fed over 300 students and faculty. The chefs decided not to go with the traditional turkey as the main course. Instead, the chefs decided to go with a delicious orange glazed ham. As sides for the ham, olive oil mashed potatoes and green bean casserole were offered.

UNF has a large vegetarian and vegan community; to appeal for this community, the chef’s also developed a vegan friendly thanksgiving meal. This course featured a quartered stuffed acorn squash filled with wild rice and was paired perfectly with a pecan harvest salad.

Saving the best for last, the chef’s developed a one of a kind desert. Pumpkin Pie Moose was the featured desert for the thanksgiving feast. The moose was pumpkin pie flavored and topped with a delicate whipped cream topping, which was served in individual cups.
