Vegetarian and Vegan on Campus (Part 2)
Many vegetarians and vegans are born in college, as it is a time to explore various interests one of those being food preferences. I started my freshman year at UNF as a full meat eater; however, I am now a senior and going on to my third year as a vegetarian. With my three years of experience as a vegetarian on the UNF campus, I have never had an issue finding healthy vegetarian options on campus. You don't just have to settle for a salad all the time! There is definitely a myriad of vegetarian and vegan options on the UNF campus to try. Here are some of my favorite healthy and satisfying vegetarian meals I have found here at UNF!
Einstein Bro. Bagels:
Einstein’s is one of my favorite places to go, especially on those days filled with lots of studying and I am feeling extra hungry. They have a wide selection of bagels and sandwiches along with several sides to keep you satisfied throughout my day. I love to get the “Hummus Veg out on Sesame,” but choose a whole-wheat bagel for some extra fiber to keep you fuller longer. If you are vegan, you can always ask to remove the Garden Veggie Schmear cream cheese. Another delicious option is peanut butter and jelly on a warm, toasted bagel is also a quick and filling option.
Jamba Juice has endless vegetarian and vegan options as their main ingredients are fruits and vegetables! This is my favorite place to stop by when I am running late in the morning and need a quick breakfast or need an afternoon pick me up to get me through my workout. The steel cut oatmeal is made with soymilk so it is already vegan friendly. It is packed with 4 grams of fiber and 8% of your daily iron requirements, which is can be an obstacle for vegetarians and vegans.
Although Chick-Fil-A is known for chicken as it is in its name, there are many vegetarian and vegan options alike! For example, there are delicious salads filled with fruits and vegetables on the menu. The “Grilled Market Salad” comes with grilled chicken and blue cheese crumbles, but these can easily be asked to be removed. It is loaded with apples, blueberries, and strawberries to get a boost of antioxidants for a perfect midday meals. This is just one option, but you can always order a fruit cup, the superfood salad, and make modifications on otherwise vegetarian-friendly options.
Outtakes is loaded with healthy vegetarian options when you are looking for a quick snack or meal and don’t have much time. They always have healthy vegetarian soups. The 12 Veggie Soup and Au Bon Pain Garden Vegetable are my favorites because the ingredients are just vegetables and broth. When I have a little less time and need something more on the go to eat in between classes, they also have a great selection of bars, fruits, nuts, and vegetables. I love to get the vegetable platters with hummus or trail mix with an apple or a banana to satisfy my hunger on the go.
As you can see, there is no need to feel limited as a vegetarian or vegan on campus. Use these tips and tricks to help make it easier for you. Enjoy trying out all of the many vegetarian and vegan options!
